Instructions
- Step 1: Heat 3 tbsp olive oil in a large Dutch oven over medium-high heat. Season 6 bone-in chicken thighs with 1 1/2 tsp salt and 1/2 tsp black pepper, then brown them skin-side down for 5 minutes until golden and crispy, flip and cook for 3 more minutes. Remove and set aside.
- Step 2: In the same pot, add 1 large diced yellow onion and sauté for 4 minutes until translucent, then add 4 minced garlic cloves, 1 tsp smoked paprika, 1 tsp ground cumin, and 1/2 tsp dried thyme. Cook for 1 minute until fragrant.
- Step 3: Stir in 2 diced medium carrots and 1 cup trimmed and halved green beans, cooking for 3 minutes to slightly soften vegetables.
- Step 4: Pour in 3 cups chicken broth and scrape the bottom to deglaze, then stir in 1 1/2 cups long grain white rice. Nestle the browned chicken thighs back into the pot, skin side up.
- Step 5: Bring to a simmer, cover, reduce heat to low and cook for 25-28 minutes until rice is tender and chicken is fully cooked.
- Step 6: Remove from heat, let rest covered for 5 minutes, then sprinkle 2 tbsp chopped fresh parsley over the top before serving.
