One-Pot Zucchini Noodles with Shrimp

Ingredients
- 4 medium, spiralized Zucchini
- 12 oz, peeled and deveined Shrimp
- 3 cloves, minced Garlic
- 1, zested and juiced Lemon
- 2 tbsp Olive oil
- 1/4 tsp Red pepper flakes
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp, chopped Fresh parsley
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove and set aside.
- Step 2: Add remaining 1 tbsp olive oil, minced garlic, and red pepper flakes to the skillet. Sauté for 1 minute until fragrant and golden.
- Step 3: Add spiralized zucchini, lemon zest, and lemon juice. Cook for 3-4 minutes until zucchini is tender-crisp, stirring frequently. Season with salt and black pepper.
- Step 4: Return shrimp to the skillet, toss to combine, and cook for 1 minute. Stir in fresh parsley and serve immediately.
