Instructions
- Step 1: Pat dry 4 salmon fillets with skin on and season both sides with 3/4 tsp salt and 1/2 tsp black pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Place salmon skin-side down and cook for 5-6 minutes without moving, until skin is crispy and golden.
- Step 2: Flip salmon and cook for 2-3 minutes more until fish is opaque and flakes easily. Remove salmon from skillet and keep warm.
- Step 3: In the same skillet, reduce heat to medium and add 4 tbsp unsalted butter. Once melted, stir in 2 tbsp lemon juice and 2 tbsp drained capers. Cook for 1 minute until butter sauce is fragrant and slightly thickened.
- Step 4: In a separate pan, heat 1 tbsp olive oil over medium heat. Add 1 lb trimmed and cut asparagus, 3 thinly sliced garlic cloves, 3/4 tsp salt, and 1/2 tsp black pepper. Sauté for 5-7 minutes until asparagus is tender-crisp and garlic is fragrant but not browned.
- Step 5: Plate salmon fillets and spoon lemon-caper butter over each. Serve with garlic asparagus on the side.
