Instructions
- Step 1: Preheat oven to 425°F. Toss 2 medium carrots, 2 medium parsnips, and 1 medium sweet potato with 2 tbsp olive oil, 1/2 tsp sea salt, and 1/4 tsp black pepper. Spread evenly on a baking sheet and roast for 25-30 minutes until tender and caramelized.
- Step 2: While vegetables roast, pat dry 2 boneless skinless chicken breasts and season both sides with 1/2 tsp sea salt and 1/4 tsp black pepper. Heat 2 tbsp olive oil in a large skillet over medium-high heat.
- Step 3: Add chicken breasts to the skillet and sear for 5-6 minutes per side until golden brown and cooked through (internal temp 165°F). Remove chicken and set aside, keeping skillet over medium heat.
- Step 4: Add 3 minced garlic cloves to the skillet and sauté for 30 seconds until fragrant. Pour in 1/4 cup apple cider vinegar and 1/2 cup chicken broth, scraping the bottom to deglaze.
- Step 5: Stir in 1 tbsp chopped fresh thyme leaves and simmer the sauce for 5-7 minutes until reduced by half and slightly thickened.
- Step 6: Plate the roasted root vegetables, place the chicken breasts on top, and drizzle with the apple cider reduction sauce. Serve immediately.
