Instructions
- Step 1: Preheat oven to 425°F. Toss 3 medium peeled carrots, 2 medium peeled parsnips, and 1 medium red onion cut into wedges with 2 tbsp olive oil, 1 tbsp chopped rosemary, 1 tsp salt, and 1/2 tsp black pepper. Spread on a baking sheet and roast for 25 minutes, stirring halfway through until golden and tender.
- Step 2: While vegetables roast, pat dry 4 Colorado trout fillets and season both sides with 1/2 tsp salt and 1/2 tsp black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat.
- Step 3: Add trout fillets skin-side down and cook for 4-5 minutes until skin is crisp and golden, then carefully flip and cook for another 2-3 minutes until the fish flakes easily with a fork.
- Step 4: Remove trout and vegetables from heat. Plate trout with roasted vegetables, drizzle with 1 minced garlic clove sautéed briefly in the skillet, and garnish with lemon wedges for squeezing over just before eating.
