Instructions

  1. Step 1: Pat chicken thighs dry with paper towels. Season both sides with salt and pepper. Heat 1 tbsp vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Step 2: Place chicken thighs skin-side down in the skillet. Cook for 8-10 minutes without moving until skin is golden brown and crispy. Flip and cook for 6-8 minutes more until internal temperature reaches 165°F.
  3. Step 3: While chicken cooks, whisk together 2 tbsp honey, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, and 1/2 tsp grated ginger in a small bowl.
  4. Step 4: Remove chicken from skillet and set aside. Pour honey-soy mixture into the skillet, scraping up browned bits. Simmer for 2 minutes until slightly thickened.
  5. Step 5: Return chicken to skillet, turning to coat evenly. Add 2 green onions (white parts only) and cook for 1 minute more.
  6. Step 6: Transfer chicken to a plate. Sprinkle with 2 green onions (green parts) and 1 tsp sesame seeds. Serve immediately.
