Pan-Seared Shrimp with Avocado and Lemon-Herb Dressing

Ingredients
- 12 oz shrimp
- 1 medium avocado
- 1 large lemon
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh dill
- 2 cloves garlic
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- 4 oz mixed greens
Instructions
- Step 1: Pat shrimp dry with paper towels and season with 1/2 tsp sea salt and 1/4 tsp black pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.
- Step 2: Add shrimp in a single layer and sear for 2 minutes per side until golden brown and opaque, then transfer to a plate.
- Step 3: While shrimp cooks, dice avocado and squeeze 1 tbsp lemon juice over it. Add 1 tbsp chopped dill and 1 minced garlic clove, then mash gently with a fork until creamy.
- Step 4: Whisk remaining 2 tbsp olive oil, 1 tbsp lemon juice, and 1 tbsp chopped dill in a small bowl. Toss mixed greens with 1 tbsp dressing, then arrange on plates.
- Step 5: Top greens with seared shrimp and dollop avocado mixture on top. Drizzle with remaining dressing and sprinkle with 1 tsp dill for garnish.
