Phantom Lemon Chicken

Ingredients
- 4 (about 1 lb) Chicken thighs
- 1 Lemon
- 2 cloves Garlic
- 2 tbsp Olive oil
- 1 tbsp Dijon mustard
- 1 tbsp Fresh parsley
- 1/2 tsp Salt
- 1/4 tsp Black pepper
Instructions
- Step 1: In a small bowl, whisk together 2 tbsp olive oil, 1 lemon juice, 1 tbsp lemon zest, 2 minced garlic cloves, 1 tbsp Dijon mustard, 1/2 tsp salt, and 1/4 tsp black pepper. Place 4 chicken thighs in a shallow dish and pour marinade over them, turning to coat. Let sit for 15 minutes at room temperature.
- Step 2: Heat a skillet over medium heat and add 1 tbsp olive oil. Add marinated chicken and cook for 5 minutes per side until golden brown. Reduce heat to medium-low, cover, and cook for 15 minutes more until chicken reaches 165°F.
- Step 3: Transfer chicken to a plate and let rest for 5 minutes. Stir 1 tbsp chopped fresh parsley into pan juices and spoon over chicken before serving.
