Quicken-Style Herb-Roasted Chicken Thighs

Ingredients
- 1.5 lbs, skin-on chicken thighs
- 3 tbsp olive oil
- 2 tsp, finely chopped fresh rosemary
- 1, thinly sliced lemon
- 4 cloves, minced garlic
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Pat 1.5 lbs chicken thighs dry with paper towels. Place in a baking dish and season with 1 tsp salt, 1/2 tsp black pepper, 4 minced garlic cloves, and 2 tsp chopped rosemary.
- Step 2: Drizzle with 3 tbsp olive oil and toss to coat evenly. Arrange 1 sliced lemon over the chicken.
- Step 3: Roast uncovered for 35-40 minutes until the chicken reaches an internal temperature of 165°F and the skin is golden and crisp.
