Rosemary-Garlic Ground Beef Loaf with Tomato Sauce

- 1 tablespoon, finely chopped fresh rosemary
- 3 cloves, minced garlic
- 1 egg
- 2 tablespoons tomato paste
- 1/2 cup, finely diced onion
- 1 tablespoon coconut aminos
- 1 cup, diced tomatoes
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large bowl, combine 1.5 pounds ground beef, 1 tablespoon chopped rosemary, 3 minced garlic cloves, 1 egg, 2 tablespoons tomato paste, 1/2 cup diced onion, and 1 tablespoon coconut aminos. Mix gently with hands until just combined.
- Step 2: Press mixture into a greased 9x5-inch loaf pan, smoothing the top. Bake for 35-40 minutes until internal temperature reaches 160°F.
- Step 3: While loaf bakes, simmer 1 cup diced tomatoes in a small saucepan for 10 minutes until slightly thickened. Pour over sliced loaf before serving.
