Herbed Ground Beef and Sweet Potato Meatloaf with Tomato Glaze

- 12 oz Ground beef
- 1 medium Sweet potato
- 1 large Egg
- 2 tbsp Fresh parsley
- 1/4 cup Onion
- 1 clove Garlic
- 1/2 tsp Dried oregano
- 1/2 tsp Dried thyme
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 2 tbsp Tomato paste
- 1 tbsp Apple cider vinegar
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a large bowl, combine 12 oz ground beef, 1 medium mashed sweet potato (1 cup), 1 large egg, 2 tbsp chopped parsley, 1/4 cup finely minced onion, 1 minced garlic clove, 1/2 tsp dried oregano, 1/2 tsp dried thyme, 1/4 tsp salt, and 1/4 tsp black pepper. Mix gently until just combined.
- Step 2: Transfer mixture to a greased 8x4 inch loaf pan. Shape into a loaf and smooth the top with a spatula.
- Step 3: In a small bowl, whisk together 2 tbsp tomato paste, 1 tbsp apple cider vinegar, and 2 tbsp water to make the glaze.
- Step 4: Spread glaze evenly over the meatloaf.
- Step 5: Bake 40-45 minutes until internal temperature reaches 160°F (71°C) and glaze bubbles. Let rest 10 minutes before slicing.
