Rosemary-Glazed Potatoes with Garlic

Ingredients
- 2 lbs baby potatoes
- 3 tbsp olive oil
- 6 cloves garlic
- 2 tbsp fresh rosemary
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Cut 2 lbs baby potatoes in half if large, then toss with 3 tbsp olive oil, 6 minced garlic cloves, 2 tbsp chopped fresh rosemary, 1 tsp salt, and 1/2 tsp black pepper in a large bowl.
- Step 2: Spread potatoes in a single layer on a baking sheet. Roast for 25 minutes, stirring once halfway, until edges are golden brown and potatoes are tender when pierced with a fork.
- Step 3: Increase oven temperature to 450°F and roast for an additional 5 minutes until potatoes are deeply caramelized and crisp on the outside.
- Step 4: Remove from oven and immediately sprinkle with an extra 1 tbsp chopped rosemary. Serve warm as a side dish.
