Rosemary-Roasted Chicken Drumsticks with Sweet Potatoes

Ingredients
- 1.5 lbs chicken drumsticks
- 2 medium, peeled and cubed sweet potatoes
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 2 tbsp fresh, chopped rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat chicken drumsticks dry and season evenly with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: In a small bowl, mix 2 tbsp olive oil, minced garlic, and chopped rosemary. Rub this mixture over chicken drumsticks.
- Step 3: Place 2 medium peeled and cubed sweet potatoes in a large bowl, drizzle with any remaining oil, and toss to coat.
- Step 4: Arrange chicken drumsticks and sweet potatoes on a sheet pan. Roast for 35-40 minutes, or until chicken reaches 165°F internal temperature and sweet potatoes are tender with golden edges.
