SafeSearch Salmon with Pixel Vegetables

Ingredients
- 4 (6 oz each) salmon fillets
- 2 tbsp olive oil
- 1 tsp lemon zest
- 2 tbsp dill
- 1 bunch asparagus
- 2 medium zucchini
- 1 red bell pepper
Instructions
- Step 1: Preheat oven to 400°F. Pat 4 salmon fillets dry and place on a parchment-lined baking sheet.
- Step 2: Mix 2 tbsp olive oil, 1 tsp lemon zest, and 2 tbsp chopped fresh dill. Rub evenly over salmon.
- Step 3: Trim ends off 1 bunch asparagus and cut into 2-inch pieces. Slice 2 medium zucchini lengthwise into 1/4-inch slices. Cut 1 red bell pepper into thin strips.
- Step 4: Arrange vegetables around salmon on the baking sheet. Drizzle with any remaining herb oil.
- Step 5: Bake for 12-15 minutes until salmon is opaque and flakes easily with a fork and vegetables are tender-crisp.
