Savory Thyme and Lemon Chicken Skillet

Ingredients
- 1 lb bone-in chicken thighs
- 3 tbsp all-purpose flour
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh thyme sprigs
- 1 lemon
- 3 garlic cloves
- 1/2 cup chicken broth
- 1 tbsp unsalted butter
- 2 tbsp fresh parsley
Instructions
- Step 1: Pat chicken thighs dry and season with 1/2 tsp salt and 1/4 tsp pepper. Dredge in flour, shaking off excess.
- Step 2: Heat olive oil in a large skillet over medium-high heat. Add chicken, skin-side down, and cook 5-6 minutes until golden, then flip and cook 4 minutes more. Remove chicken and set aside.
- Step 3: Add thyme and garlic to skillet, sautéing 1 minute until fragrant. Squeeze lemon juice from half the lemon into skillet, then add broth and simmer 3 minutes until slightly reduced.
- Step 4: Return chicken to skillet, nestling into sauce. Simmer uncovered 10 minutes until chicken reaches 165°F. Stir in butter and chopped parsley, then serve.
