Savory Vegetable Soup with Lemon Zest

Ingredients
- 2 medium, diced carrots
- 2 stalks, diced celery
- 1 medium, finely chopped onion
- 2 cloves, minced garlic
- 4 cups chicken broth
- 1 medium, diced zucchini
- 2 tbsp, fresh dill
- 1, zest and juice lemon
- 1 tbsp olive oil
- 1 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Heat olive oil in a large pot over medium heat. Add onions and celery, cooking for 5 minutes until softened but not browned.
- Step 2: Add carrots and garlic, stir for 2 minutes until fragrant, then pour in 4 cups chicken broth and bring to a gentle simmer.
- Step 3: Add diced zucchini, 1 tsp sea salt, and 1/2 tsp black pepper. Simmer uncovered for 15 minutes until vegetables are tender.
- Step 4: Stir in 2 tbsp fresh dill, lemon zest, and lemon juice. Cook for 2 more minutes until flavors meld, then remove from heat. Taste and adjust seasoning if needed.
