Sear-Grilled Chicken Thighs with Lemon and Thyme

  1. Step 1: Pat chicken thighs dry with paper towels. Season evenly with 1/2 tsp salt and 1/4 tsp black pepper.
  2. Step 2: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  3. Step 3: Place chicken thighs skin-side down in the skillet. Sear undisturbed for 10-12 minutes until skin is golden and crispy.
  4. Step 4: Flip chicken, add 2 minced garlic cloves and 1 tbsp chopped fresh thyme to the skillet, and cook for 1 minute until fragrant.
  5. Step 5: Add 1 sliced lemon (cut side down) and 1/4 cup water to the skillet. Cover and reduce heat to medium-low.
  6. Step 6: Simmer for 18-20 minutes, or until chicken reaches 165°F (74°C) internally.
