Sear-Grilled Chicken Thighs with Lemon and Thyme

Ingredients
- 6 (bone-in, skin-on, about 1.5 lbs) chicken thighs
- 2 tbsp olive oil
- 1, thinly sliced lemon
- 1 tbsp, chopped fresh thyme
- 2, minced garlic cloves
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat chicken thighs dry with paper towels. Season evenly with 1/2 tsp salt and 1/4 tsp black pepper.
- Step 2: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat until shimmering.
- Step 3: Place chicken thighs skin-side down in the skillet. Sear undisturbed for 10-12 minutes until skin is golden and crispy.
- Step 4: Flip chicken, add 2 minced garlic cloves and 1 tbsp chopped fresh thyme to the skillet, and cook for 1 minute until fragrant.
- Step 5: Add 1 sliced lemon (cut side down) and 1/4 cup water to the skillet. Cover and reduce heat to medium-low.
- Step 6: Simmer for 18-20 minutes, or until chicken reaches 165°F (74°C) internally.
