- 1 red, 1 yellow (1 cup sliced) bell peppers
- 8 oz (sliced) white mushrooms
- 1 medium (julienned) carrots
- 2 cloves (minced) garlic
- 1 tbsp grated fresh ginger
- 2 tbsp tamari
- 1 tbsp coconut aminos
- 1 tsp sesame oil
- 1 tbsp avocado oil
- 1 tsp sesame seeds
Instructions
- Step 1: Heat avocado oil in a large skillet over medium-high heat until shimmering. Add bell peppers, carrots, and mushrooms, then stir-fry for 5 minutes until vegetables begin to soften.
- Step 2: Add minced garlic and grated ginger, stirring constantly for 30 seconds until fragrant.
- Step 3: Whisk tamari, coconut aminos, and sesame oil in a small bowl. Pour over vegetables, stirring to coat evenly. Cook for 2 more minutes until sauce thickens slightly.
- Step 4: Remove from heat, sprinkle with sesame seeds, and serve immediately over cauliflower rice or with extra vegetables.
