Sesame-Glazed Bok Choy and Shiitake Rice Bowls

Ingredients
- 1 cup, cooked brown rice
- 4 cups, chopped bok choy
- 8 oz, sliced shiitake mushrooms
- 2 tbsp sesame oil
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp, minced ginger
- 2 cloves, minced garlic
- 1 tsp sugar
- 1 tsp cornstarch
- 2 tbsp water
Instructions
- Step 1: Prepare 1 cup cooked brown rice according to package instructions and set aside.
- Step 2: Heat 2 tbsp sesame oil in a large skillet over medium-high heat, add 8 oz sliced shiitake mushrooms, and cook for 5 minutes until golden, then add 4 cups chopped bok choy and cook for 4 minutes until wilted.
- Step 3: In a small bowl, whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp minced ginger, 2 minced garlic cloves, 1 tsp sugar, 1 tsp cornstarch, and 2 tbsp water.
- Step 4: Pour the sauce mixture over the mushrooms and bok choy in the skillet, stirring constantly until the sauce thickens and coats the vegetables, about 3 minutes.
- Step 5: Divide the cooked rice between bowls, top with the sesame-glazed vegetable mixture, and serve immediately.
