Sesame-Glazed Chicken Stir-Fry with Broccoli

Ingredients
- 2 (8 oz total) chicken breast
- 1.5 cups broccoli
- 1 red and 1 yellow bell peppers
- 3 tbsp coconut aminos
- 1 tbsp sesame oil
- 1 tsp ginger
- 2 cloves garlic
- 1 tsp sesame seeds
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Thinly slice 2 chicken breasts (8 oz total) and place in a bowl. Heat 1 tbsp sesame oil in a large skillet over medium-high heat. Add chicken and cook for 5-6 minutes per side until golden and cooked through; remove and set aside.
- Step 2: In the same skillet, add 1.5 cups chopped broccoli florets and 1 red and 1 yellow bell pepper (thinly sliced). Stir-fry for 3-4 minutes until vegetables are bright green and tender-crisp.
- Step 3: Add 3 tbsp coconut aminos, 1 tsp minced ginger, 2 minced garlic cloves, 1/4 tsp salt, and 1/4 tsp black pepper to the skillet. Simmer for 2 minutes until sauce thickens slightly, then return chicken to the skillet. Toss to coat evenly and sprinkle with 1 tsp toasted sesame seeds before serving.
