  1. Step 1: Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. Step 2: Cut zucchini into 1/2-inch thick half-moons, discarding ends. Place on sheet pan with 2 tbsp avocado oil, 3 minced garlic cloves, 1/4 tsp salt, 1/4 tsp black pepper, and 1/2 tsp dried thyme. Toss until evenly coated.
  3. Step 3: Bake for 20 minutes, stirring once halfway, until zucchini edges are golden and tender.
  4. Step 4: While vegetables roast, cook bacon in a skillet over medium heat for 8-10 minutes until crisp. Drain on paper towels.
  5. Step 5: Remove sheet pan from oven, sprinkle with cooked bacon bits and 2 tbsp grated Parmesan. Serve immediately while crispy.
