Instructions
- Step 1: Preheat oven to 400°F. Dice 2 medium sweet potatoes into 1/2-inch cubes, toss with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper on a parchment-lined baking sheet.
- Step 2: Slice 1.5 lbs pork loin into 1-inch thick medallions. Rub with 1 minced garlic clove, 1 tbsp olive oil, 1/2 tsp salt, 1/4 tsp black pepper, and 1 tbsp chopped rosemary.
- Step 3: Arrange pork medallions and sweet potatoes on the baking sheet. Roast for 25 minutes until pork reaches 145°F internally and sweet potatoes are golden and tender, flipping halfway through.
