Instructions
- Step 1: Preheat oven to 425°F. In a small bowl, whisk together 3 tbsp maple syrup, 2 tbsp Dijon mustard, 1 tsp garlic powder, 1 tsp salt, and 1/2 tsp black pepper to create the glaze.
- Step 2: Place 1 lb pork tenderloin in the center of a large sheet pan. Brush half of the maple-mustard glaze evenly over the pork.
- Step 3: Toss 1 lb halved Brussels sprouts with 3 tbsp olive oil and a pinch of salt and pepper, then spread them around the pork on the sheet pan.
- Step 4: Roast everything for 20 minutes, then brush the pork with the remaining glaze and toss the Brussels sprouts. Continue roasting for another 10-15 minutes until the pork reaches an internal temperature of 145°F and the Brussels sprouts are browned and tender.
- Step 5: Remove from oven and let the pork rest for 5 minutes before slicing. Serve pork slices with roasted Brussels sprouts on the side.
