Shrimp Fajitas with Zucchini Noodles

Ingredients
- 1 pound shrimp
- 2 medium, spiralized zucchini
- 1 cup, sliced bell peppers
- 1/2 cup, sliced onion
- 1 teaspoon fajita seasoning
- 1 tablespoon olive oil
- 2 cloves, minced garlic
- 1 tablespoon lime juice
- 1/4 teaspoon salt
Instructions
- Step 1: Pat 1 pound of shrimp dry with paper towels and toss with 1 teaspoon of fajita seasoning.
- Step 2: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Step 3: Add 2 minced garlic cloves and cook for 30 seconds until fragrant, then add 1/2 cup of sliced onion and 1 cup of sliced bell peppers.
- Step 4: Cook for 4 minutes, stirring occasionally, until peppers soften and onions caramelize slightly.
- Step 5: Add the seasoned shrimp in a single layer and cook for 3 minutes without stirring, then flip and cook 2 more minutes until shrimp are opaque.
- Step 6: Add 2 medium spiralized zucchinis to the skillet, toss to combine, and cook for 2 minutes until slightly tender.
- Step 7: Remove from heat, stir in 1 tablespoon of lime juice and 1/4 teaspoon of salt, and serve immediately.
