Simmered Shrimp in Coconut Lime Sauce

  1. Step 1: Heat 1 tbsp oil in a skillet over medium heat. Add 1/2 cup chopped onion and cook for 3 minutes until soft.
  2. Step 2: Add 4 minced garlic cloves, 1 inch minced ginger, and 1 chopped green chili; cook for 2 minutes until fragrant.
  3. Step 3: Stir in 1/2 tsp turmeric powder and 1/2 tsp coriander powder; cook for 1 minute until aromatic.
  4. Step 4: Add 450g shrimp and cook for 2 minutes until they turn pink.
  5. Step 5: Pour in 400ml coconut milk and 3 tbsp lime juice; stir to combine.
  6. Step 6: Bring to a gentle simmer and cook for 5 minutes until shrimp are fully cooked and sauce has thickened slightly.
  7. Step 7: Season with 1/2 tsp salt and simmer for 1 more minute.
  8. Step 8: Serve hot.
