Instructions
- Step 1: Preheat oven to 300°F. In a small bowl, mix 2 tbsp ground wattleseed, 4 minced garlic cloves, 3 tbsp olive oil, 2 tsp sea salt, and 1 tsp black pepper to form a paste. Rub this mixture all over the 3 lb lamb shoulder.
- Step 2: Place lamb shoulder in a roasting pan and insert 2 rosemary sprigs around it. Cover loosely with foil and roast in the oven for 4 hours until meat is tender and falling off the bone.
- Step 3: When lamb has 1 hour left, toss 4 peeled and chunked medium beetroots with 1 tbsp honey, a pinch of salt, and a drizzle of olive oil. Spread on a baking sheet and roast at 400°F for 45 minutes, turning halfway, until caramelized and soft.
- Step 4: Remove lamb from oven and rest covered for 15 minutes. Carve lamb and serve with the roasted honey-glazed beetroot alongside.
