Slow-Simmered White Bean Soup

  1. Step 1: Heat 1 tbsp olive oil in a medium pot over medium heat. Add 1/2 diced onion, 1 diced carrot, and 1 diced celery stalk, and cook for 5 minutes until softened.
  2. Step 2: Add 2 minced garlic cloves and cook for 1 minute until fragrant.
  3. Step 3: Stir in 1 can white beans (drained and rinsed), 1 cup broth, 1/2 tsp dried thyme, 1/4 tsp dried rosemary, and salt and black pepper to taste. Bring to a gentle simmer.
  4. Step 4: Cover and simmer for 20 minutes, stirring occasionally, until the vegetables are tender.
  5. Step 5: Stir in 2 tbsp chopped fresh parsley and serve hot.
