Instructions
- Step 1: Preheat oven to 325°F. Score the surface of the 9-pound smoked bone-in ham in a diamond pattern about 1/8 inch deep and insert 15 whole cloves into the intersections.
- Step 2: In a small saucepan, combine 3/4 cup brown sugar, 1/2 cup pineapple juice, 2 tbsp Dijon mustard, and 1 tsp ground ginger. Heat over medium heat, stirring until sugar dissolves and glaze thickens slightly, about 5 minutes.
- Step 3: Place the ham on a rack in a roasting pan and brush half of the glaze over the ham. Scatter 1 cup pineapple chunks around the base of the ham.
- Step 4: Bake the ham uncovered for about 2 hours, basting every 20 minutes with remaining glaze until the ham is heated through and the glaze is sticky and caramelized.
- Step 5: Remove from oven and let rest for 15 minutes before carving.
