Smoky Paprika Ground Beef Stir-Fry with Zucchini Noodles

Ingredients
- 1 lb ground beef
- 2 medium zucchini
- 2 tbsp olive oil
- 1/2 cup diced yellow onion
- 2 cloves minced garlic
- 1 tsp smoked paprika
- 1/2 cup diced tomatoes
- 2 tbsp chopped fresh cilantro
- 1 tbsp lime juice
Instructions
- Step 1: Shred zucchini using a spiralizer or julienne peeler, then pat dry with paper towels to remove excess moisture.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef, breaking it into small crumbles, and cook for 6-7 minutes until browned and cooked through, breaking into small pieces with a spatula.
- Step 3: Add diced onion and minced garlic to the skillet, stirring for 2 minutes until onions are translucent and fragrant.
- Step 4: Stir in smoked paprika and diced tomatoes, cooking for 3 minutes until tomatoes begin to soften and release liquid.
- Step 5: Add shredded zucchini to the skillet, stirring gently to combine. Cook for 4-5 minutes until zucchini is tender but still holds shape, stirring occasionally.
- Step 6: Remove from heat and stir in fresh cilantro and lime juice. Taste and adjust seasoning if needed.
