Solar-Roasted Chicken with Lemon and Thyme

- 4 (about 1.5 lbs) Chicken breasts
- 3 tbsp Olive oil
- 1 Lemon
- 2 tbsp Fresh thyme
- 3 cloves Garlic
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 small Onion
Instructions
- Step 1: Preheat oven to 400°F. Pat 4 chicken breasts dry with paper towels and place in a baking dish. Drizzle with 2 tbsp olive oil, then sprinkle with 1 tsp salt, 1/2 tsp black pepper, 3 minced garlic cloves, and 2 tbsp chopped fresh thyme. Toss to coat evenly.
- Step 2: Arrange 1 sliced lemon and 1 small sliced onion around the chicken. Drizzle the onion with 1 tbsp olive oil and season with a pinch of salt and pepper.
- Step 3: Roast in the preheated oven for 25-30 minutes until chicken reaches 165°F internally and onions are golden and tender.
