Soy-Glazed Pork Tenderloin with Snap Peas and Ginger

Ingredients
- 1.5 lb pork tenderloin
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 tbsp honey
- 2 cloves garlic
- 1 cup snap peas
- 1 tsp sesame oil
- 2 cups cooked white rice
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Pat pork dry and season with salt and pepper. Heat 1 tsp sesame oil in a skillet over medium-high heat. Sear pork for 3 minutes per side until golden. Transfer to a plate.
- Step 2: Whisk soy sauce, rice vinegar, ginger, honey, and minced garlic in a bowl. Pour over pork in the skillet, bring to a simmer, and cook 5 minutes, spooning glaze over pork until thickened and glossy.
- Step 3: Add snap peas to skillet and cook 4 minutes until bright green and crisp-tender. Remove pork and peas from pan.
- Step 4: Spoon 1 tbsp pan sauce over cooked rice, then top with pork and snap peas. Serve immediately.
