Spectrum Vegetable Stir-Fry with Citrus-Herb Dressing

- 2 tablespoons olive oil
- 2 cloves, minced garlic
- 1 medium, thinly sliced red bell pepper
- 1 medium, julienned carrot
- 1 medium, thinly sliced yellow bell pepper
- 1 cup, florets broccoli
- 1/2 cup, shredded red cabbage
- 1, juiced lemon
- 2 tablespoons, chopped dill
- 2 tablespoons, chopped parsley
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 2 minced garlic cloves and cook for 30 seconds until fragrant, being careful not to brown.
- Step 2: Add 1 cup sliced red bell pepper, 1 cup sliced yellow bell pepper, and 1 cup julienned carrot to the skillet. Stir-fry for 5 minutes until vegetables begin to soften.
- Step 3: Add 1 cup broccoli florets and 1/2 cup shredded red cabbage, stirring to combine. Continue cooking for 3-4 minutes until broccoli is crisp-tender.
- Step 4: In a small bowl, whisk together 1/4 cup lemon juice, 1 tablespoon olive oil, 2 tablespoons chopped dill, 2 tablespoons chopped parsley, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- Step 5: Pour the dressing over the cooked vegetables and toss to coat evenly. Cook for 1 more minute to heat through, then serve immediately.
