Splash Citrus-Cured Salmon with Lemon-Dill Glaze

Ingredients
- 4 (6 oz each) salmon fillets
- 1 medium lemon
- 2 tbsp fresh dill
- 1 tbsp honey
- 1 tsp olive oil
- 1 tbsp white wine vinegar
- 1 clove garlic
Instructions
- Step 1: Zest and juice 1 medium lemon. Finely chop 2 tbsp fresh dill and mince 1 garlic clove. Whisk zest, juice, 1 tbsp honey, 1 tsp olive oil, and 1 tbsp white wine vinegar in a bowl.
- Step 2: Place 4 salmon fillets skin-side down in a shallow dish. Rub 3/4 of the lemon-dill mixture evenly over each fillet, pressing gently to adhere.
- Step 3: Refrigerate uncovered for 30 minutes to cure, then pat fillets dry with paper towels.
- Step 4: Heat 1/2 tsp olive oil in a skillet over medium-high. Cook salmon fillets 3-4 minutes per side until edges are opaque and golden. Brush remaining glaze over fillets before serving.
