Stir-Fried Okra with Tamarind

Ingredients
- 2 cups okra
- 1/2 cup yellow onion
- 1 clove garlic
- 2 tbsp tamarind paste
- 1/4 cup water
- 1/4 tsp turmeric powder
- 1/2 tsp salt
- 1 tbsp vegetable oil
- 1/4 tsp cumin seeds
Instructions
- Step 1: Trim and slice 2 cups okra into 1/2-inch pieces.
- Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add 1/4 tsp cumin seeds and let sizzle for 30 seconds until fragrant.
- Step 3: Add 1/2 cup chopped yellow onion and cook for 5 minutes until golden brown, stirring occasionally.
- Step 4: Add 1 minced garlic clove and cook for 1 minute until fragrant.
- Step 5: Stir in 2 cups sliced okra, 2 tbsp tamarind paste, 1/4 cup water, 1/4 tsp turmeric powder, and 1/2 tsp salt. Bring to a simmer.
- Step 6: Cover and cook for 10-12 minutes, stirring occasionally, until okra is tender and sauce has thickened.
- Step 7: Serve hot as a side dish.
