Stir-Fried Shrimp with Garlic and Chives

Ingredients
- 12 oz shrimp
- 3 cloves garlic
- 1/4 cup chives
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1/2 teaspoon sesame oil
- 1 tablespoon vegetable oil
Instructions
- Step 1: Peel and devein 12 oz shrimp, then pat dry. Mince 3 garlic cloves and thinly slice 1/4 cup chives.
- Step 2: Heat 1 tablespoon vegetable oil in a wok or skillet over high heat until shimmering. Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Remove and set aside.
- Step 3: Add 1/2 teaspoon sesame oil to the skillet, then stir-fry minced garlic for 15 seconds until fragrant. Add sliced chives and stir-fry for 30 seconds until slightly wilted.
- Step 4: Return shrimp to the skillet, add 1 tablespoon soy sauce and 1 teaspoon rice vinegar. Toss for 1 minute until shrimp are coated and sauce thickens slightly. Serve immediately.
