Stir-Fried Tofu and Vegetables with Sesame Sauce

Ingredients
- 14 oz, pressed and cubed Firm tofu
- 2 cups, cut into small florets Broccoli
- 1 cup, julienned Carrots
- 1, sliced Bell pepper
- 2 tbsp Sesame oil
- 3 tbsp Soy sauce
- 1 tbsp Rice vinegar
- 1 tbsp Honey
- 2 cloves, minced Garlic
- 1 tsp, minced Ginger
- 1 tsp Cornstarch
- 2 tbsp Water
Instructions
- Step 1: Heat 1 tbsp sesame oil in a large skillet or wok over medium-high heat. Add cubed tofu and cook for 4-5 minutes per side until golden brown. Remove and set aside.
- Step 2: In the same skillet, add remaining 1 tbsp sesame oil. Add 2 minced garlic cloves and 1 tsp minced ginger, stir-frying for 30 seconds until fragrant.
- Step 3: Add 2 cups broccoli florets, 1 cup julienned carrots, and 1 sliced bell pepper. Stir-fry for 5 minutes until vegetables are crisp-tender.
- Step 4: Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp cornstarch, and 2 tbsp water in a small bowl. Pour over vegetables and stir until sauce thickens and coats vegetables, about 2 minutes.
- Step 5: Return tofu to skillet and toss to coat. Cook for 1 more minute. Garnish with 1 tbsp sesame seeds.
