Stir-Fried Tofu with Green Beans and Peanuts

  1. Step 1: Heat vegetable oil (2 tablespoons) in a wok over medium-high heat until shimmering. Add cubed tofu (14 ounces) and cook for 5 minutes, turning occasionally, until golden brown. Remove and set aside.
  2. Step 2: Add garlic (3 cloves, minced), fresh ginger (1 tablespoon, minced), and red pepper flakes (1/4 teaspoon) to the wok. Stir for 30 seconds until fragrant.
  3. Step 3: Add green beans (10 ounces, cut into 1-inch pieces) and stir-fry for 4 minutes until crisp-tender.
  4. Step 4: Return tofu to the wok, then add soy sauce (2 tablespoons), rice vinegar (1 tablespoon), and sesame oil (1 teaspoon). Toss to coat evenly.
  5. Step 5: Stir in chopped peanuts (1/4 cup) and cook for 1 minute. Serve immediately.
