Stir-Fried Tofu with Hoisin and Mixed Vegetables

Ingredients
- 14 oz, pressed and cut into 1-inch cubes firm tofu
- 2 tbsp vegetable oil
- 1, thinly sliced red bell pepper
- 1 cup broccoli florets
- 2, minced garlic cloves
- 1 tbsp, minced fresh ginger
- 3 tbsp hoisin sauce
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp cornstarch
- 1 tbsp water
- 2, sliced green onions
Instructions
- Step 1: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add tofu cubes and cook for 5-6 minutes, turning occasionally, until golden brown and crispy on all sides; remove and set aside.
- Step 2: Add remaining 1 tbsp vegetable oil to skillet. Add bell pepper slices and broccoli florets, stir-frying for 3-4 minutes until crisp-tender. Add minced garlic and ginger, cooking for 1 minute until fragrant.
- Step 3: Return tofu to skillet. Stir in hoisin sauce, soy sauce, rice vinegar, and cornstarch mixed with 1 tbsp water. Cook for 2-3 minutes, stirring constantly, until sauce thickens and coats tofu and vegetables. Sprinkle with sliced green onions.
