Stir-Fried Vegetables with Sesame and Garlic

- 2 tbsp vegetable oil
- 3 cloves, minced garlic
- 1 tbsp, grated ginger
- 2 cups, chopped broccoli
- 1 cup snow peas
- 2 cups, sliced carrots
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp sugar
- 1 tbsp sesame seeds
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat until shimmering.
- Step 2: Add 3 minced garlic cloves and 1 tbsp grated ginger, stir-frying for 30 seconds until fragrant.
- Step 3: Add 2 cups chopped broccoli, 1 cup snow peas, and 2 cups sliced carrots. Stir-fry for 5-7 minutes until vegetables are crisp-tender, stirring frequently.
- Step 4: In a small bowl, whisk together 1 tbsp soy sauce, 1 tsp rice vinegar, 1 tsp sesame oil, and 1/2 tsp sugar.
- Step 5: Pour sauce over vegetables and toss to coat evenly. Cook for 1 more minute until sauce thickens and vegetables are glossy. Transfer to a plate and sprinkle with 1 tbsp sesame seeds before serving.
