Taco-Stuffed Mini Bell Peppers

Ingredients
- 12, halved and seeded mini bell peppers
- 1 lb ground turkey
- 1/2 cup, frozen and thawed corn kernels
- 1/2 cup, rinsed black beans
- 1 tsp cumin
- 1/2 tsp chili powder
- 1, juiced lime
- 2 tbsp chopped cilantro
Instructions
- Step 1: Heat a skillet over medium-high heat. Add ground turkey and cook for 6-7 minutes, breaking into crumbles, until no pink remains.
- Step 2: Stir in 1/2 cup corn, 1/2 cup black beans, 1 tsp cumin, 1/2 tsp chili powder, and 1 tbsp lime juice. Cook for 3 minutes until heated through, then remove from heat.
- Step 3: Spoon turkey mixture into pepper halves, pressing gently to fill. Sprinkle with 2 tbsp chopped cilantro and serve immediately.
