Tahini-Glazed Roasted Carrots with Lemon Zest

Ingredients
- 1 lb carrots
- 3 tbsp tahini
- 1 lemon
- 1 tbsp olive oil
- 1 tsp maple syrup
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Trim carrot ends and cut into 1-inch thick diagonal slices. Toss with 1 tbsp olive oil, salt, and pepper on a baking sheet.
- Step 2: Roast for 20 minutes until edges are caramelized and tender, flipping halfway through.
- Step 3: Whisk tahini, 1 tsp maple syrup, and 1 tbsp lemon juice in a small bowl until smooth. Stir in remaining 1 tsp maple syrup and 1/4 tsp salt.
- Step 4: Drizzle glaze over roasted carrots and toss gently. Sprinkle with 1 tsp finely grated lemon zest and serve immediately.
