Uillinn Roast Chicken

  1. Step 1: Preheat oven to 425°F (220°C). Pat 4-pound trussed chicken dry with paper towels, then rub with 2 tablespoons olive oil, 2 minced garlic cloves, 1 tablespoon chopped rosemary, 1 tablespoon chopped thyme, and salt and pepper to taste.
  2. Step 2: Place chicken in a roasting pan, then arrange 2 pounds halved baby potatoes, 2 cut carrots, 2 cut parsnips, and 1 cut onion wedges around the chicken.
  3. Step 3: Drizzle remaining 1 tablespoon olive oil over vegetables and season with salt and pepper.
  4. Step 4: Roast for 1 hour and 15 minutes, basting with pan juices every 20 minutes, until chicken is golden brown and internal temperature reaches 165°F (74°C).
  5. Step 5: Let rest 10 minutes before carving to retain juices.
