Vibrant Chopped Salad with Avocado and Pepitas

Ingredients
- 4 oz kale
- 1/2 cup radishes
- 1/2 cup cucumber
- 1/2 avocado
- 2 tbsp pumpkin seeds
- 2 tbsp lime juice
- 1 tbsp olive oil
- 1/4 tsp sea salt
- 1/8 tsp black pepper
Instructions
- Step 1: Remove tough kale stems and chop leaves into 1-inch pieces. Place in a large bowl and massage with 1/4 tsp sea salt for 2 minutes until slightly softened.
- Step 2: Thinly slice radishes and cucumber into matchsticks. Add to kale with avocado chunks and pumpkin seeds.
- Step 3: Whisk lime juice, olive oil, remaining 1/4 tsp sea salt, and black pepper in a small bowl. Pour over salad and toss gently until evenly coated and ingredients are just dressed.
