Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup chocolate chips
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour 6 standard muffin cups or line with paper liners.
- Step 2: In a large bowl, whisk together 1 cup all-purpose flour, 1/2 cup unsweetened cocoa powder, 1 tsp baking powder, and 1/4 tsp salt.
- Step 3: In a separate bowl, beat 1/2 cup granulated sugar, 1/2 cup vegetable oil, 2 large eggs, and 1 tsp vanilla extract until smooth.
- Step 4: Gradually add the dry ingredients to the wet, alternating with 1/2 cup milk, beginning and ending with dry ingredients. Mix until just combined.
- Step 5: Divide the batter evenly among the muffin cups (about 1/4 cup each). Press 2 tablespoons of chocolate chips into the center of each cup, making a well.
- Step 6: Bake for 18-20 minutes until a toothpick inserted into the side (not the center) comes out clean. The center should be slightly soft.
- Step 7: Let cool in the pan for 5 minutes, then carefully remove and serve warm.
