Zucchini and Herb Ground Beef Tacos with Avocado Crema

Ingredients
- 12 oz Ground beef
- 1 medium Zucchini
- 1/4 cup Fresh cilantro
- 1 tbsp Lime juice
- 1/2 tsp Garlic powder
- 1/2 tsp Cumin
- 1/4 tsp Salt
- 1/4 tsp Black pepper
- 1/2 Avocado
- 1/2 tbsp Lime juice
- 2 tbsp Water
- 8 leaves Lettuce leaves
Instructions
- Step 1: Heat a large skillet over medium heat. Add 12 oz ground beef and cook for 5-6 minutes, breaking into small crumbles until browned.
- Step 2: Stir in 1 medium grated zucchini (1.5 cups), 1/4 cup chopped cilantro, 1 tbsp lime juice, 1/2 tsp garlic powder, 1/2 tsp cumin, 1/4 tsp salt, and 1/4 tsp black pepper. Cook 3-4 minutes until zucchini is tender and moisture evaporates.
- Step 3: In a small bowl, mash 1/2 avocado with 1/2 tbsp lime juice and 2 tbsp water until smooth.
- Step 4: Spoon ground beef mixture into 8 lettuce leaves. Drizzle with avocado crema and serve immediately.
