Aperol-Glazed Shrimp with Lemon Herbs

  1. Step 1: Pat 1 lb shrimp dry with paper towels. Season with 1/4 tsp kosher salt and 1/4 tsp garlic powder.
  2. Step 2: Heat 1 tbsp extra virgin olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2 minutes per side until pink and slightly charred.
  3. Step 3: Reduce heat to medium, pour in 3 tbsp Aperol and 1 tbsp lemon juice, then add 1 tsp chopped thyme. Simmer for 1 minute until sauce thickens slightly.
  4. Step 4: Stir in 1 tbsp chopped parsley, then remove from heat. Let rest for 2 minutes before serving.
