Aperol-Glazed Shrimp with Lemon Herbs

Ingredients
- 1 lb, peeled and deveined large shrimp
- 3 tbsp Aperol
- 1 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 tsp, chopped fresh thyme
- 1 tbsp, chopped fresh parsley
- 1/4 tsp garlic powder
- 1/4 tsp kosher salt
Instructions
- Step 1: Pat 1 lb shrimp dry with paper towels. Season with 1/4 tsp kosher salt and 1/4 tsp garlic powder.
- Step 2: Heat 1 tbsp extra virgin olive oil in a large skillet over medium-high heat. Add shrimp in a single layer and cook for 2 minutes per side until pink and slightly charred.
- Step 3: Reduce heat to medium, pour in 3 tbsp Aperol and 1 tbsp lemon juice, then add 1 tsp chopped thyme. Simmer for 1 minute until sauce thickens slightly.
- Step 4: Stir in 1 tbsp chopped parsley, then remove from heat. Let rest for 2 minutes before serving.
