- 2 large, thinly sliced (1/4 inch thick) zucchini
- 2 tbsp, melted butter
- 1/2 cup, grated parmesan cheese
- 1/2 cup heavy cream
- 1 clove, minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp, chopped fresh parsley
Instructions
- Step 1: Preheat oven to 375°F. Grease a 9x13-inch baking dish with 1 tbsp melted butter.
- Step 2: Arrange 2 cups thinly sliced zucchini in a single layer in the dish. Drizzle with 1 tbsp melted butter and sprinkle with 1/2 tsp salt, 1/4 tsp black pepper, and 1 minced garlic clove.
- Step 3: Whisk together 1/2 cup heavy cream, 1/2 cup grated parmesan, and 1 tbsp melted butter until smooth.
- Step 4: Pour cream mixture evenly over zucchini, covering all slices.
- Step 5: Bake for 32-35 minutes, until top is golden and zucchini is tender when pierced with a fork.
- Step 6: Sprinkle with 2 tbsp chopped fresh parsley and rest for 5 minutes before serving.
