Cauliflower Polenta with Chive Butter

Ingredients
- 1 large head, riced cauliflower
- 2 tablespoons butter
- 2 tablespoons, finely chopped chives
- 1/4 cup, grated parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 400°F. Place riced cauliflower (about 4 cups) in a baking dish, season with 1/4 teaspoon salt and 1/8 teaspoon black pepper, and drizzle with 1 tablespoon butter. Toss to combine.
- Step 2: Bake for 20-25 minutes, stirring once halfway, until cauliflower is golden and tender.
- Step 3: Remove from oven, stir in 1/4 cup grated parmesan cheese and 2 tablespoons chopped chives. Return to oven for 5 minutes to melt cheese.
- Step 4: Serve hot, garnished with additional chives.
