Instructions
- Step 1: Preheat grill to medium heat (around 350°F). Remove a soaked cedar plank (soaked in water for 1 hour) from water and place on the grill to warm for 3 minutes.
- Step 2: In a small bowl, whisk 1/4 cup maple syrup, 2 tbsp Dijon mustard, 1 tbsp soy sauce, and 2 tsp chopped fresh thyme until combined.
- Step 3: Season 2 whole cleaned trout with 1 tsp sea salt and 1/2 tsp black pepper inside and out. Stuff the cavity of each trout with 2 lemon slices.
- Step 4: Place the trout on the warm cedar plank skin-side down. Brush the fish generously with half of the maple glaze.
- Step 5: Close the grill lid and smoke the trout on the cedar plank for 20-25 minutes, brushing with the remaining glaze halfway through, until the fish flakes easily with a fork and has a smoky aroma.
- Step 6: Carefully remove the cedar plank from the grill and transfer the trout to a serving platter.
