Creamy Cauliflower 'Mashed' Potatoes

- 12 oz cauliflower
- 2 tbsp unsalted butter
- 2 tbsp heavy cream
- 1/4 cup Parmesan cheese
- 1 clove garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh chives
Instructions
- Step 1: Steam riced cauliflower for 12-15 minutes until very tender. Drain thoroughly in a colander to remove excess moisture.
- Step 2: Transfer steamed cauliflower to a bowl. Add 2 tbsp butter, 2 tbsp heavy cream, 1/4 cup grated Parmesan, minced garlic, 1/2 tsp salt, and 1/4 tsp black pepper. Mash with a potato masher until smooth and creamy, adding more heavy cream if needed for desired texture.
- Step 3: Transfer to a serving dish and sprinkle with 1 tbsp chopped fresh chives. Serve immediately while warm.
